B IS FOR BEET

{THE MIGHTY BEET}

This beautiful, starchy root, who’s greens are delicious and nutritious, is earthy, versatile and stunning just to look at.
Beet greens are particularly high in vitamin A, iron and calcium. They can be eaten in salads, juiced, cooked with or used as wraps. Because they are rich in carotenes, they are supportive to healthy glowing skin. They increase the body’s alkalinity and improve liver function as well as help correct problems related to bile flow. (Bile is needed to help emulsify fats.)
The beet root itself, is richest in iron, potassium, niacin, copper and vitamin C, with other nutrients present in smaller amounts.
Beets have a cleansing effect on the liver and is supportive to the stomach and intestines. They aid digestion and the lymphatic system to flush out toxins. The provide clean burning energy and help build red blood cells!
From borsht to juice, salads to beet kvass or purreed beet hummus, the possibilities with beets are endless!
